RedBrick Pizza

RedBrick Pizza Kitchen Cafe is a QSR restaurant chain with locations in California and about a half dozen other states. The parlors offer upscale pizzas cooked in as few as three minutes, using RedBrick's custom-built, proprietary gas ovens. Other menu items include salads, gelato, and Fhazanis -- a fire-roasted sandwich. Founders James and Lynn Minidis were formerly Little Caesar's franchisees who split with that chain to form RedBrick.

Fresh Pizzas Made to Order in Just 3 Minutes

RedBrick Pizza parlors offer fresh, delicious pizzas cooked to order in just a few minutes thanks to custom pizza ovens baking at 100 degrees. Options that appeal to modern preferences include gluten free, vegetarian, and vegan dishes. 

The state-of-the-art Earthstone Due gas-fired brick oven give the pizza a tender, crisp finish that's never soggy. The oven tech is combined with Red Brick's cold-proofed, olive oil-infused organic dough mix to produce the ultimate slice.

Beyond pizza, guests can choose from a variety of premium salads, along with a RedBrick Pizza's own version of the classic Italian sandwich, but lower in carbs  – the Fhazani®. 

And for dessert, RedBrick offers a selection of high-quality, authentic gelatos.

For RedBrick restaurants where a liquor license has been obtained (which RedBrick recommends franchisees do), beer and wine are provided as excellent complements to the meal.

Cost and Timeline for Opening a RedBrick Pizza Location

RedBrick Pizza restaurants are designed for 2,500 square feet, plus a patio and parking space. The cost for a build-out can range from $316,000 to $538,000, inclusive of construction, equipment, permits, architectural fees, franchise fees, initial marketing expenses, initial inventory, signage, miscellaneous expense, and 3 months of operating capital.

From beginning to opening day, franchisees can expect to go from requesting information on the franchise to welcoming their first guests in approximately 6-12 months.

Active or Absentee Ownership?

RedBrick restaurant hours are typically 11am to 10pm on weekdays and 11am to midnight on Friday and Saturday, although this can change depending on location and whether a liquor license has been obtained by the franchisee. Franchisees can choose to operate and manage their business directly, or they can hire a Key Operator who has attended RedBrick training to manage the day-to-day operations of their restaurant.

No pizza industry knowledge is required for RedBrick franchisees, as full training is provided, but restaurant or comparable retail experience is certainly an advantage. Similarly, successful franchisees are likely to have a deep connection to, and understanding of, their local market and experience in hiring and leading staff.
